Cranberry Raspberry
Freeze Recipe - serves 6
2 cups of raspberry, or one 12-ounce package
frozen lightly sweetened red raspberries, thawed
1/2 boiling water
1 1/2 cups cranberry juice, chilled
1 cup ice cubes
One 12-ounce can reduced-calorie lemon-lime
carbonated beverage, chilled
Lemon slices (optional)
Place the 2 cups raspberries in a fine-mesh
sieve set over a large glass measure or pitcher.
Pour boiling water over raspberries.
Using the back of a spoon, press berries to
release juice. Discard berry pulp; reserve juice
(you should have about 1 cup). Cover and chill.
In a blender combine the raspberry juice and the
cranberry juice. With blender running, add the
ice cubes through opening in lid. Blend until
slushy.
Transfer cranberry mixture to a pitcher. Slowly
pour in carbonated beverage; stir gently.
Serve over additional ice cubes. If desired,
garnish with lemon slices and additional fresh
raspberries.
